HOLGER is a handheld meat tenderiser with 48 crossing stainless steel needles designed to break up muscle fibres and tendons in cuts of meat for a more tender and flavourful end result.

The needles penetrate approximately 22 mm into the meat, creating channels that help marinades and spices be absorbed deeper and faster. The spring-back mechanism automatically retracts the needles after each press, making handling safer during cooking preparation.

Tough meat with too many tendons and connective tissue is a common problem that neither a long marination nor high heat can always fully solve.

Traditional pounding flattens the meat but rarely breaks up the fibres correctly. HOLGER is designed to solve the problem from the inside – the needles penetrate the meat deeply, releasing tension in the muscle structure and creating shortcuts for the marinade's flavours.

The 48 crossing needles in HOLGER work in a wide pattern that covers a large surface area with every press. The needle depth of approx. 22 mm reaches down into the middle layer of the meat, breaking up tendons and connective tissue that otherwise make the meat tough and chewy – even in thicker cuts like pork chops and steaks.

48 crossing stainless steel needles - The needles are made of stainless steel with excellent hardness and durability, food-grade and designed for direct contact with ingredients. The crossing needle pattern provides wider penetration per press.

Spring-back for safe handling - The built-in spring mechanism automatically retracts the needles back into the protective position after each press, reducing the risk of accidental skin contact during handling and storage.

Hanging handle for storage - The ergonomic PP handle is designed with a hole at the end for hanging on a hook or kitchen rail, saving space in the kitchen and keeping HOLGER easily accessible.

Needle depth of approx. 22 mm - The needles penetrate about 22 mm into the meat to reach the muscle fibres deep down and create channels for the marinade's active ingredients – which, for most meat types, results in a noticeable difference in flavour absorption compared to surface marinating.

How to Use HOLGER

  • Place the cut of meat on a stable cutting board.
  • Hold HOLGER by the handle and press the needle head against the meat's surface with even pressure.
  • Work systematically across the entire cut of meat in an even pattern.
  • Flip the meat and repeat on the other side if necessary.
  • Marinate or season immediately after tenderising for best flavour absorption.
  • Separate the needle head from the handle and clean under running water after use.
